He's you when you get older. Well... There's probably a few differences between you and the other you, considering the older Kirk has brown eyes while your Kirk has blue, evidently, so it's probably an across the board thing.

It's not me when I get older, because we're two separate people. I'm never going to have the same experiences that the other Sulu will, so I'll never develop mentally and emotionally in the way he did.
